
One Dish Wonders
I am always on the hunt for easy recipes. And while I'm searching, no two words stand out to me more than the words "one pot". I can't get enough of simple, nutritious recipes that require one dish to cook, and, just as importantly, one dish to clean.
Not only are one pot/pan recipes perfect for weeknight family meals, they're also perfect for taking to others. Transporting a one dish meal is a cinch and can help ease the stress of meal taking. If taking just one thing seems too light, add in a loaf of bread, a pre-made fruit salad, a jar of applesauce, and/or a carton of ice cream. Keep things easy for yourself.
Here are three one dish meals that have been a hit at my house lately.

Much to my delight, one meal my family does not get tired of is this yummy baked lemon chicken. The preparation is as simple as putting potatoes, chicken and asparagus on a sheet pan and adding lemon juice, zest, olive oil and some herbs and spices. It's amazing how much flavor can come from so few ingredients.

When I sent out a Perfect Potluck schedule to help with vacation meal planning, my sister in law signed up to make Egg Roll in a Bowl. I couldn't wait to try it and it didn't disappoint! The ground turkey was a nice, light protein and bagged coleslaw mix kept preparation simple. Our whole group, including kids, loved the meal.

Don't be fooled by the long instructions. Everything, including the rice, cooks together to make a deliciously filling vegetarian Jambayla. This is a great time of year to make this recipe if your garden is still producing summer squash.
