
Memorable Meals
Don't you love it when you have a recipe that you've used for YEARS and you still look forward to making it and eating it? For me, one of those recipes is Taco Soup.
I can hardly believe it wasn't that long ago when it was more common to find recipes in the newspaper than to search for them online. I found this one when I was newly married and I've made it again and again. Over 15 years later, it is still a favorite meal for our family. It's tasty, healthy, flexible, perfect for the winter, makes a lot, and freezes well.
Taco Soup
- 2 pounds hamburger (I use 1 pound)
- 1 cup chopped onion
- 1 quart diced tomatoes
- 1 quart tomato juice (I use low sodium)
- 1 quart brown, pinto or kidney beans (I use a combination)
- 2 TBSP taco seasoning (I make my own)
- 2/3 cup brown sugar (I reduce this to 1/3 cup)
- 1 can corn
- Salt and pepper to taste
Brown hamburger and onions. Drain. Return to pot and add rest of ingredients. Simmer 1 hour. Serve with grated cheese, sour cream, and tortilla chips.
