April Meal Inspiration
Sometimes the hardest part of taking someone a meal for me is choosing what to make. Here is an idea for a complete meal using some tested and easily transported recipes from our recipe section
April's weather can be a little iffy so why not provide an indoor picnic for a family you're taking a meal to? Bring along some paper plates and plastic utensils for easy clean up.
For the main dish, try Beef BBQ for a crowd. I love this recipe because of its ease- throw all the ingredients into your roasting pan and let your oven do the work. Scale to fit the number of people you're cooking for. This recipe is very forgiving so if you don't get the exact right measurements down don't worry, it will still be delicious. Serve with some store bought buns and this amazing cole slaw recipe from Robert Irvine. I never liked cole slaw until I tried this one! I usually buy a bag of shredded cabbage to make the preparation even easier.
As a side, I recommend this lemony roasted potato salad. It is a different take on potato salad- light, refreshing, and healthy.
I always try to include fruit in a meal I'm taking. Mix together some of your favorites or follow this recipe for a pretty, yummy fruit salad. The hints of citrus and sweetness really complement the fruit.
For dessert, grab a bottle of root beer and some vanilla ice cream for root beer floats. If you want to make it even more special, pick up a pack of colorful paper straws. Target's dollar section almost always has some fun ones to choose from. Kids and adults alike will enjoy this sweet treat at the end of a delicious meal!
