Notes from Rebecca Ortiz:
Thank you so much for caring for Alex, Jake and baby girl as they settle in to life as a family of 3! They are grateful for homemade or takeout. Alex has celiac (severe gluten allergy) and is VERY sensitive to gluten-containing ingredients and any cross-contact with gluten. This requires some extra care when choosing ingredients, prepping and cooking. PLEASE READ THIS NOTE IN ITS ENTIRETY! They also love takeout - some options are Toast, Beauvine, Garnett's, Mellow Mushroom, Chick Fil A, The Daily and Pinky's. Please reach out to Jake (804-882-3060) or Alex's sister Rebecca (757-876-9695) if you have any any celiac-related questions! Drop-off can be any time between 5-7PM - text Jake and Alex (757-876-9345) in a group chat to coordinate.
- Preparing your kitchen and work surfaces
- Pull out everything you're going to cook with, grab a FRESH sponge and give everything a quick clean
- Choosing ingredients
- Sticking to whole foods (fruits, veggies, meat) is always a safe bet!
- Sneaky things that sometimes contain gluten: dressings/sauces/marinades, nuts, spice mixes
- Use FRESH containers of anything jarred or bagged that may have had cross-contact with gluten (butter, peanut butter, mayo, cheese, etc)
- Reading Labels
- NO wheat, barley, rye, malt
- Look out for contains wheat or processed in a facility with wheat under the ingredients label
- IN the ingredients list: look out for maltodextrin, dextrose and natural flavors - these can be code words for gluten!
- Even if it says Certified GF, make sure to check the ingredients lists on the back - sometimes it's still processed with wheat so is not safe
- When in doubt, use the GF Scanner app, google the ingredient/product celiac safe or text Jake/Rebecca
- Safe/reliable brands: Siete for Mexican, Jovial or Banza for pasta, Schar for bread
